Recently we had neighbors move in to the house behind us. I wanted to bake them something as a welcome gift but G was being pretty fussy today so I reached for something quick: King Arthur Flour Gluten Free Pumpkin Bread Mix. This mix included real pumpkin and a blend of clove, cinnamon, ginger and nutmeg. It was certainly not as healthy as making it from scratch but it was a lot quicker. All I had to do was add 1/4 cup of oil (but I substituted applesauce to be healthier), 3 eggs, and 2/3 cup milk (I used nonfat). It made 12 muffins in about 24 minutes and my whole house smelled like fall.
Since it was the first time I used this mix I wanted to give them some quality control before sending them over. They could’ve had a stronger pumpkin & spice flavor but even with the applesauce substitution they were still very moist. My husband even had one and was surprised they were gluten free (because they tasted good). Even after 5 1/2 years of me being gluten free he still thinks it is inferior taste-wise, but that is not always the case!
